This cookbook project is made in collaboration with Diaspora Dinners, a Chicago-based dinner series that combines research and creativity to explore the cuisines of the Jewish Diaspora. 

Louisiana Kashrut shines a light on foods of the American South.  The book highlights the many cuisines that have mixed in the region, the complex relationship to kosher law, and the contributions of African Americans, many of whom went uncredited, their ideas simply described as “old fashioned.”  This book attempts to honor those cooks and explores the influence Southern culture had on Jewish life and cuisine.

Recipes include: Old School and New School Pickles, Yam Challah with sage butter, Coca-Cola Brisket, Yankee Style Corn Bread, Schnecken, Chess Pie, Sweet Tea, and more.
